Vegan + Grain Free Nutella Cookie Sandwiches

These are perfection.  Just perfection.  Especially on a snowy Sunday where all I want to do is cuddle up and watch movies.  These cookies will not disappoint.  I promise.

Vegan + Grain Free Nutella Cookie Sandwiches

Inspired + adapted from My New Roots

Make your own Nutella here.  (Before adding in chocolate reserve 4 tbsp. of plain hazelnut butter.)

-Chia Gel-

2 Tbsp. Chia seeds+2 Tbsp. honey+ 4 Tbsp. water.  Stir well and let sit for 15 minutes to form gel.

-Wet ingredients-

4 Tbsp. melted coconut oil+ 4 Tbsp. hazelnut butter+ 1/2 cup coconut sugar+ 1 Tbsp. Vanilla.  Mix well.

-Dry Ingredients-

2 cups rolled oats ground in food processor+1/4 tsp. sea salt+ 1 tsp. baking soda. Mix together.

Pre-heat oven to 350. Combine Chia gel into wet ingredients and mix together.  Pour over dry ingredients and fold until sticky dough forms.  On a baking sheet with parchment paper roll out  level, tbsp. size balls of dough.  Using a drinking glass flatten dough into round disks.  Bake for 8-10 minutes and let cool completely.  I did this in two batches.  Once cookies are cool, spread Nutella on one side of cookie and place another cookie on top.  Eat them, love them and share them with your friends.  And little people too!

Cheers To Your Health

I ate an unfathomable amount of cheese puffs and cookies as a child.  I turned out okay.  I even crave and love real whole foods years later.  Give me a juice that tastes like dirt and I am bursting at the seams with enthusiasm.  Fortunately my little lady shares this love for the good green earth too.  There is almost nothing she won’t eat and this makes me the happiest Mama on the block.  When Octave was in my belly I started prepping her with my favorite foods while I  dreamed of a baby who would eat from our plates at our favorite restaurants rather than order beans and cheese or worse, chicken nuggets.  I love beans and I love cheese but I would certainly not want her diet to consist of mainly these.  My philosophy is not to forbid certain foods but rather show her more nutritious ones.  I know that if she is never exposed to sugar that the moment she is given access to it, she will go completely mad.  I don’t want that either. I want her to be filled with so many good nutrients throughout the day that letting her enjoy some homemade nutella, cookies or ice cream is not a worry.  I want to emphasize less on what she shouldn’t eat and focus on all the wonderful things she IS eating.  Recently I mixed up a little concoction that Octave drinks daily.  I call it her superfood smoothie.  This lady takes her smoothie so seriously that I can hardly keep a straight face while watching her drink it.  We both enjoy it for lunch or an afternoon snack.  It is packed full of goodness and pretty darn tasty as well!

 Superfood Smoothie

Makes 16 ounces

1 frozen banana

1 cup frozen blueberries

1/2 cup plain yogurt

3/4 cup orange juice

2 tbsp. chia seeds

1 tbsp. lucuma powder

1 chunk of tumeric root (about the size of a grape)

1 chunk of ginger root (just a little bigger than the turmeric,) or to taste

1 tsp. bee pollen

1/4 tsp cinnamon

2-4 ice cubes, depending on how you prefer the consistency

Peel turmeric and ginger, roughly chop and place in blender. Add all other ingredients except ice cubes and blend until smooth.  Add ice cubes until you have a consistency you like. Pour and sprinkle bee pollen for garnish.

* I LOVE ginger! Unless you love it as much as i do, start with a little less and you can always keep adding more.
